Honky Potatoes

Honky Potatoes

4 potatoes (peeled and sliced)
1 onion (chopped)
1 green bell pepper (chopped)
2 Smoked sausage links (sliced)
4 eggs (beaten)
Salt and pepper to taste

Fry potatoes and onions until almost done. Add bell pepper and
smoked sausage, cook until done. Quickly add eggs and cook until
eggs are done. Add salt and pepper to taste.

Serve with hot biscuits or toast on a stick (if camping).

Campfire Vidalias

Campfire Vidalias
Original recipe yield: 4 servings.

4 Vidalia onions
4 tablespoons butter
4 cloves chopped garlic
salt to taste

DIRECTIONS:
Peel onions, and cut each one into quarters, keeping onion together.
Place one tablespoon of butter and one whole clove of garlic into the
center of each one. Double wrap each onion in aluminum foil and drop
into the hot coals of your campfire.
Cook for 30 to 40 minutes. Carefully remove them from the coals and
tear them open. Season with salt to taste, and eat.

BANANA BOAT

BANANA BOAT
6 Medium Bananas
6 Sheets 12" x 12" tin foil
6 Tbsp Mini Chocolate Chips.
6 Tbsp Mini Marshmellows
Leave the banana in the peel. Hold lengthwise. Slice through the skin and halfway through the banana end to end. Make same incision about 1/2 an inch away. Peal back the sliced peel, leaving the skin still attched. Carve out trench in middle of banana. Fill with one tablespoon each marshmellows and chocolate chips. Replace peel. Hold "trench-side up" and place on tin foil.
Wrap banana lengthwise - keeping the fold of the foil over the trench. (this makes it easier to check if it is done)
Place on hot coals or near fire.
You know it is done when the chocolate chips are starting to melt.
SERVES 5-6 PEOPLE

BEEF NACHO DIP ! YUM!

BEEF NACHO DIP
1 lb ground beef
1 onion
1 jar picante sauce (dip)
1 jar cheese dip
1 small container sour cream
salt/pepper to taste
nacho chips

Chop onion and saute in a pan.
Brown ground beef, drain and add picante sauce with a little water.
Cook down.
Add cheese dip, salt and pepper. Incorporate.
Lastly add sour cream and incorporate.
Put in bowls and dip chips to eat.
Serves 3 to 4
